Elderflower Pear Bellini: A 3-Ingredient Brunch Cocktail

Some cocktails wait for a special occasion. This one creates one.

There's a version of a Bellini for people who like a little extra fuss, and another for people who simply want three ingredients and a chilled flute. This one is firmly in the second camp: refined enough for a brunch table, yet simple enough to make on a random Tuesday.

The Elderflower Pear Bellini combines Mayer Elderflower Syrup, pear nectar, and chilled prosecco in a drink that looks as though it took considerably more effort than it did. Floral elderflower lifts the soft sweetness of the pear, while the prosecco keeps everything bright and sparkling.

What Is an Elderflower Pear Bellini?

A traditional Bellini pairs peach purée with prosecco. This version trades the peach for pear and adds elderflower syrup, giving the cocktail a delicate floral note without complicating the recipe.

No shaker is required, and there is nothing to prepare in advance. Just chill the ingredients, pour, and serve.

Ingredients

  • 1½ tablespoons Mayer Elderflower Syrup

  • 1 ounce pear nectar or purée

  • 4 ounces chilled prosecco

  • 1 thin pear slice, for garnish

How to Make an Elderflower Pear Bellini

  1. Add the elderflower syrup and pear nectar to a champagne flute.

  2. Slowly pour in the chilled prosecco.

  3. Stir gently so the drink keeps as many of its bubbles as possible.

  4. Garnish with a thin slice of pear and serve immediately.

When to Serve It

This Bellini fits naturally on a brunch table, but brunch is hardly a requirement. Serve it as a welcome drink, make one before dinner, or pour it simply because an ordinary evening could use something cold and sparkling.

It is best made just before serving. If you want to prepare ahead, chill the prosecco, pear nectar, and glasses instead—the actual mixing takes less than a minute.

The occasion, in this case, is entirely optional.
