Some Cocktails Wait for a Special Occasion. This One Creates One.
There's a version of a Bellini for people who like a little extra fuss, and a version for people who just want three ingredients and a chilled flute. This one is firmly the second kind — refined enough for a brunch table, simple enough to make on a random Tuesday.
The Elderflower Pear Bellini takes Mayer's Elderflower Syrup, a splash of pear nectar, and a good chilled prosecco, and turns three ordinary ingredients into something that looks like it took real effort. Add the syrup and pear nectar to a champagne flute, slowly pour in the prosecco, stir gently, and garnish with a thin pear slice.
The occasion, in this case, is entirely optional.
